What could be nicer at the end of a chilly, rainy day than fried chicken for supper?
Ethan and Aileen were here for the weekend and I decided to make this meal that's always been a family favorite -- fried chicken, mashed potatoes and peppery gravy, green beans cooked the old timey way (for a long time, with bacon) and, as a nod to healthful eating, a green salad.
For dessert -- a raspberry buckle with optional heavy cream. I used my mother's blueberry buckle recipe, left out the cinnamon in the topping, and substituted frozen raspberries for the blueberries.
Rainy day comfort food!

Boy o boy, does that ever look like a yummy meal, and thanks for sharing the 'buckle' recipe as I have all kinds of the berries in the freezer and will probably make up some raspberry buckle for company that is coming next week end.
Yesterday was a day of constant heavy rain, and we've even had a good downpour this morning, but they promise clear skies/mild temperatures ... my fingers are crossed!

I might be limited to a no fat/low fat diet but there's nothing wrong with my imagination. And I imagine this 'rainy day comfort' to be absolutely delicious!
I know it's too late to come for dinner but at least you made my appetite return! Dang that chicken looks good! :)
We have fried chicken maybe twice a year. This was for Ethan because it's one of his favorites. And for the rest of us because of the rain. Now we return to the path of virtuous eating. I predict broiled salmon tonight.
What a wonderful dinner to survive this awful rainy spell. I just looked out this morning and the sun was there. I hardly recognized it - it's been so long since we've seen it. Chances of precipitation tomorrow here - ZERO. Yea, it's about time.

Haven't fixed fried chicken in decades. But yours sure looks good. Broiled salmon sounds pretty good, too. We had grilled (inside) tuna last night. Not bad. Also tabouleh, one of my favorites. No dessert. Weep.
Oh, yum. The rain reached us this morning, so I'm going to make a new recipe in the crockpot -- a chicken with garlic inside and olives and lemons outside, over potatoes. I may do an apple pie as well. Last night at the church bean supper we had our first pumpkin pie of the season, which felt like a blessing. I chose the plain and Onkel Hankie Pants had a piece with pecan garnish, both excellent. Probably because they contained molasses.
Oh, yes, there is sun here too, Sam! What a joy!
Tabouleh -- now there's a thought. I love it but haven't made it in a long while.
Auntie Knickers -- I NEED that garlic chicken olive recipe!! It sounds wonderful.

Would you believe that they do make a quiet satisfying fried chicken here? Although, a Southern Fried Chicken is still another thing entirely!
Now there's an interesting meal, some of which I have never eaten before. I'm sorry you're having so much rain Vicki, but take comfort in the fact that rainy old England is dry, for once. We have just given you our rain for a while, but don't worry, we'll have it back soon.

Star -- I encountered a few dishes new to me when I was in England -- Scotch egg, pasties, clotted cream, but my favorite was the brie and butter and bacon baguette sandwich.
